The lemon tree in the garden is overflowing with ripe, juicy fruits, so of course, I had to make some lemon curd. This was my first time making it and I was multi-tasking between actually cooking the stuff and taking photos, so the egg whites were visible because I had let the mixture sit for a while. I guess it’s all experience.
RECIPE
Juice from 5 lemons
Zest from 1
125g butter
3 eggs
3/4 C sugar
Whisk everything in a pot on low heat until the first bubble rises to the surface. Makes one large jar, which can be kept for around 2 weeks.
